Mary Ellen Brabec is a Board Certified Specialist in Renal Nutrition through the Academy for Nutrition and Dietetics.  She has been involved with renal nutritional care throughout her career in both dialysis centers and hospitals.  Her extensive clinical experience includes patient assessment and education of both patients and renal staff.  She has been a member of the Renal Network Medical Review Board since 2009.

Maureen Leugers is the North American Director of Non-Commercial Customer Success for Gordon Food Service.  Previously, Maureen was the Division Director of both Environmental Services and Nutritional Services at Lutheran Hospital in Fort Wayne, IN.  Her strong knowledge of foodservice operations combined with being a former college instructor and text book author put Maureen in demand as a public speaker.  She currently serves as the Industry Advisor for the dietetic practice group, Dietetics in Health Care Communities.  Maureen will focus on how to train different generations of employees in the workforce.

Rich Smice’s qualifications include the Chef de Cuisine Certification.  He has extensive experience in all aspects of the foodservice industry, with positions ranging from chef’s apprentice to high-level roles as executive chef, general manager, and now Corporate Chef.  Not only is Rich an expert at cooking demonstrations, but he also develops menus, handles training and customer relations, and is involved in design and costing.  Seminar participants can expect to observe Rich demonstrate scratch cooking that is healthy, tasty, and economical.

News Flash! Illinois Is Adopting A New Food Code . . . Are You Ready?

Laurie Jahn is involved in all aspects of training, technology, and quality improvement with the Lake County Health Department. She is responsible for working with management in addressing ongoing issues to develop solutions with a focus in the food program.  She was previously employed by Performance Food Group-Thoms Proestler as the Training Manager preparing the sales staff in Food Service Manager Certification.  She also worked for the Oakland County Health Department as a Senior Sanitarian and at Medline as the Training Manager.
